Fair question. Here's the honest version.

At the High setting the difference is very hard to see for photos. JPG compression can soften very sharp edges, like small text in screenshots or thin lines in diagrams — if those matter, keep them as PNG or use High quality. Medium and Small trade a little detail for much smaller files.
JPG has no transparency, so the see-through parts of a PNG need to be filled with a color. White is the default because it suits documents and most websites. You can also choose black, or pick any custom color to match where the image is going.
That happens with simple graphics — logos, icons, flat illustrations — which PNG compresses extremely well. JPG is designed for photos. For graphics like that, keep the PNG, or pick Small quality if a JPG is required.
Yes. WebP, GIF and BMP images convert to JPG the same way. Animated GIFs become a single still JPG of the first frame, since JPG cannot hold animation.

No. The conversion runs in your browser, so your images stay on your device. You can check: load the page, turn on Airplane Mode and it still converts. There is nothing on our end to store or leak.
On a Mac you can open the image in Preview and use File › Export, one image at a time. On Windows, Paint can Save As JPEG. This page does the same for up to 30 images at once, in any browser, with no software to open — and it works on iPhone and Android too.
